To actually forage you want to use the magnifying glass icon on the left hand side of your screen. Also you don't need a tree branch, you can use any old plank of wood and craft it into a spear from the crafting menu. I cut down trees and saw the logs. No shortages of branches or plants that way.

As a level 4 forager I was able to consistently get 1-2 veggies a day, 1-2 logs a day, 8-25 twigs a day and 2-6 insects a day.Be mindful, some helmets obscure your vision/lower your foraging radius.
